Flying Fish
The official fish of Barbados - prepared island style!
ingredients
- 4 flying fish fillets
- 1/2 cup lime juice
- 4 tbsp. chopped seasoning
- 1/2 cup milk
- 1 egg
- 1/2 cup flour
- 1/2 cup breadcrumbs
directions
Soak fish in lime juice for 10 minutes (don’t rinse). Pack chopped seasoning into ridges in fish. Mix milk, egg and 1 tbsp. flour to make batter. Dip fish in batter. Coat fish in flour and breadcrumb mixture. Place fish, seam side down, in hot buttered skillet. Fry on low heat for approximately 2 minutes on each side.

Can prepare tilapia this way too - almost as good as the original!
