Banana Muffins
ingredients
- 3 very ripe bananas
- 1 tsp vanilla
- 1 egg
- 1/4 cup vegetable oil
- 1 pinch of salt
- 1/2 cup brown sugar
- 1 cup crushed cereal
- 1 cup white flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 pinch of cinnamon
- 1/4 tsp nutmeg

Preheat oven to 400°F.

Mash bananas in a bowl. Add vanilla, egg, vegetable oil, salt, brown sugar and whisk it all together.

Mix in crushed cereal and white flour, baking powder and baking soda, cinnamon and nutmeg.

Pour into a 12 count muffin tin, lined with paper liners. Stick in oven for 15 minutes. Remove and allow them to cool on a wire rack.
