Miniature Beef Wellingtons
I have made this for special Valentine’s Day dinner for Dad.
ingredients
- 2 small beef tenderloin steaks cut 1 inch thick (4 ounces each)
- 1 t. olive oil
- 1/4 pound mushrooms, chopped finely
- 1 1/2 T. dry red wine
- 1 1/2 T. finely chopped green onions
- 1/8 t. thyme
- salt and pepper
- puff pastry

Heat oven to 425 degrees. In a large nonstick skillet, heat oil over medium-high heat until hot. Add mushrooms, cook and stir until tender. Add wine, cook just until liquid is evaporated. Stir in green onions and thyme. Add salt and pepper, as desired. Remove from skillet and cool thoroughly.

Heat same skillet over medium-high heat until hot. Place steaks in skillet. Cook three minutes, turning once. Steaks will be partially cooked. Do not overcook.

Season with salt and pepper.

Place mushroom mixture evenly over each steak. Wrap with puff pastry, sealing on the bottom Bake 425 degrees about 18 minutes. Let stand 5 minutes, and serve.
