Sokeroida Pikkuleipä

Sokeroida Pikkuleipä means “sugar cookies” in Finnish. I just thought it sounded cooler than sugar cookies. =]
ingredients
- 2 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butter (softened)
- 1 1/2 cups granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1-2 tablespoons milk (if extra moisture is needed)

0. Preheat to 375 degrees.

1. Combine flour, baking soda, baking powder and salt in one bowl.

2. In a separate bowl, beat butter and sugar together until somewhat creamy. If it’s looking rather “uncreamy”, add about half of that milk.

3. Beat in egg and vanilla.

4. Beat in flour mixture.

5. Shape into walnut-sized balls and sprinkle a generous amount of sugar on top of each cookie. You may also choose to roll the entire ball in sugar, but that’s only if you don’t mind scrubbing little caramel crystals off your cookie sheet later.

6. Bake for 10-12 minutes or until edges are lightly browned. These cookies tend to run on the lighter side. “Lightly browned” is like someone chilling in the sun for like 20 minutes, if you know what I mean. =]
