Twice Baked Potatoes

ingredients
- potatoes
- 1 tablespoon butter per potato
- 1/4 cup buttermilk per potato
- salt and pepper
- grated parmesan or cheddar cheese

Bake potatoes for 1 hour at 400 degrees or until done.

Split and let cool.

Spoon insides of potato into a bowl, save skins.

Add 1 T butter per potato. Add 1/4 C buttermilk per potato. Salt and pepper to taste. Blend.

Scoop potato mixture back into potato skins.

Sprinkle with shredded parmesan or cheddar cheese.

Bake 5-10 minutes more.
