Southwestern Roll ups
These have always been a hit! Makes a ton so cut in half for a smaller crowd!
ingredients
- 1 10 oz package frozen chopped spinach, thawed
- 1 envelope fajita seasoning mix
- 1/2 cup chicken broth
- 3 (6oz) packages refrigerated southwestern flavored chicken breast strips, chopped
- 1 can black beans, drained and rinsed
- 1 can (11oz) corn with peppers drained
- 2 cups shredded monterey jack cheese with peppers
- 6 10inch tortilla
- Salsa

Combine spinach and fajita seasoning in large skillet; add broth. Cook over medium heat, stirring often (5 min) Stir in chicken and next 3 ingrediants; simmer until cheese melts.

Spread approx 1 cup (avoid overfilling) mixture on 1 side of tortilla leaving 1/2 inch boarder around edges.

Roll up tightly and wrap in plastic wrap. Chill for 30 min.

Unwrap and cut into slices. Serve with Salsa
