Summer Bean Salad
ingredients
- Edamame (shelled) 2 cups
- Geen beans 8 ounces
- Yellow wax beans 8 ounces
- Cherry tomatoes (halved) 1 1/2 cups
- Dressing:
- 3 T olive oil
- 1/3 cup red wine vinegar
- 2 tsp chopped fresh basil
- 2 tsp chopped fresh thyme
- 1 tsp salt
- 3/4 tsp pepper

Boil edameme for 3 minutes, rinse in cold water

Boil green beans and wax beans for 3 minutes, rinse in cold water

Combine vegetable and dressing
