Joel's Cornbread
Creamy, crunchy, and even better the next day! Double the recipe or you’ll regret not having made enough for seconds!
ingredients
- 2 cups cornmeal
- 2 cups milk
- 4 eggs
- 1 1/2 tsp salt
- 1 tsp baking soda
- 1 c. bacon grease
- 2 - 17 oz. cans creamed corn
- 3 lbs breakfast sausage
- 2 lg onions, chopped
- 4 cups cheddar cheese, shredded
- 4 fresh jalapenos, optional
directions

Cook, drain and crumble sausage. Seed, de-rib and chop jalapenos.

Mix first 7 ingredients (cornmeal thru corn).

Layer in either a 10" skillet, or 13x9 pan if you doubled it:

(spray with cooking spray)

sprinkle a little cornmeal

1/2 the batter
- 7
all the sausage
- 8
onion
- 9
cheese
- 10
last 1/2 batter
- 11
jalapenos (on 1/2 the pan)

Bake at 350 for 1 hour.
notes
This is also great without the sausage and jalapenos, as a side to soup!
