Okra Jambalaya
I received this recipe from a Fodor’s friend, Grcxx3. It is simple and delicious.
ingredients
- Okra (about 4 dozen large, 8 dozen small, or 2 frozen packages)
- 3 Tblsp butter
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 cup green pepper, chopped
- 2 cans chopped tomatoes
- 1 tsp parsley
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp cayenne pepper

Wash, trim, and slice okra into pieces (about 1 cm each).

In large pot, melt butter and sauté onion, garlic, and green pepper. Add tomatoes, parsley, salt, pepper, cayenne, and okra. Cook for 20 minutes until okra is tender.

Serve alone or over rice.

Note: Sometimes I add sauteed ham or sausage.
