Mom's Chicken Soup
ingredients
- 3-3 1/2 lb. chicken
- water
- 3 carrots, cut into 1" pieces
- 3 stalks celery, chopped
- 2 onions, chopped
- 4 oz. fine egg noodles
- 1/4 c. chopped parsley
- salt
- pepper

Rinse chicken in cold water. Place in 3 qts. water in large pot. Add carrots, onions and celery; bring to a boil.

Reduce heat to low; cover and simmer 60-75 minutes.

Remove from heat. Remove chicken and cool. Remove and discard skin and bones; shred meat.

Skim fat from broth, then add chicken. Bring to a boil.

Add noodles, parsley, salt and pepper. Simmer 10 minutes until noodles are tender.
