Halibut Chowder
This recipe makes a lot of chowder.
ingredients
- 1 lb. bacon
- 1/2 gallon milk
- 1 large white onion
- 5-6 cloves garlic
- 1 can creamed corn
- 3 tablespoons dried basil
- 3 carrots
- cayenne
- black pepper
- juice of 2 lemons
- 2 cans evaporated milk
- 1 bunch green onions
- 4 stalks celery
- 1 can kernel corn
- 1 can chicken broth
- 8 small red potatoes, diced
- 3 pounds halibut steaks, cubed
- Creole seasonings
- salt
- flour

Fry bacon. Add two large spoons of grease to two large serving spoons of flour to make a roux (combine flour and grease until a paste forms - do not brown). In a large pot, saute vegetable seasonings in butter until soft. Add roux.

Turn to low heat and slowly add milk and evaporated milk, stirring constantly to mix and to prevent milk from scalding. When all mixed, add rest of ingredients, except halibut. Slowly heat to almost boiling, stirring frequently. Cook until potatoes are done. Add halibut, cook for 10 minutes.
