Vipurva's Tendli
A Gujrati way of making Ivy Gourd. It’s simple and awesome.
ingredients
- Tendli (Ivy Gourd)
- Oil
- Mustard Seeds (rai)
- Aesofotadia (heeng)
- Turmeric Powder (haldi)
- Soda BiCarb
- Ginger
- Green Chili Paste
- Dhanajeera Powder
- Sugar
- Sesame Seeds
- Lime
- Coriander
- Salt to Taste

Chop the tendli

For The Tadka –

* Put oil in a deep pan,

* Add Mustard seeds (raai)

* Add aesofotadia (heeng)

* Add Turmeric powder (haldi)

Now add the chopped vegetables to the tadka and stir around.

Add Salt and Soda BiCarb.

Add Ginger and Green Chilli Paste

Stir. Put a lid on the pan using a deep dish and fill it with a little water.

The dish, not the pan with the veggies. Do Not add any water to the vegetable.

Remove the lid once the vegetables are suitably cooked.

Add DhaanaJeera Powder.

Add a bit of sugar.

Add Sesame seeds.

A tablespoon of lime.

Mix it all up.

Add chopped coriander for seasoning.
