Baked Vegetable Rice Pilaf
ingredients
- 1 1/2 cups chicken broth
- 3/4 cup long grain white rice
- 1/4 cup carrots, chopped
- 1/4 cup frozen corn
- 1/4 cup frozen peas
- Minced onions, to taste
- Shredded cheddar cheese, to taste

1. Preheat oven to 350 degrees. Boil the chicken broth.

2. Add all ingredients, except for cheese, in casserole dish and mix together.

3. Cook covered 30 minutes. Take out and sprinkle cheese on top. Cover and cook last 5 minutes.
