Apple-Cheese Pie
ingredients
- Topping:
- 3/4 cup granulated sugar
- 3/4 cup unsifted flour
- 8 tbsp butter, chilled and cut into 1/4" bits
- 1/2 cup freshly grated Parmesan Reggiano
- Pie:
- 5 tart cooking apples of medium size [~1 1/2 lbs], peel, core, cut lengthwise into 1/8" thick
- slices [final volume ~5 cups]
- 1 tbsp strained fresh lemon juice
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar
- 2 tbsp flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 9" unbaked sweet pie crust
- 1 tbsp butter, cut into 1/4" bits

Preheat oven to 375°. To prepare topping, combine sugar, flour and butter bits in large bowl. Rub together with fingertips until look like coarse meal. Add cheese and mix.

Pie:

Place apples in deep bowl, add lemon juice and toss to mix. Combine sugars, flour and spices and sift over apples. Toss gently to coat.

Spoon into pie shell and spread evenly. Dot with butter. Scatter topping over apples. Bake 40 min or until apples show no resistance when pierced with small knife and topping is golden brown. Let cool to room temperature before serving.
