Serve with chips or red rice, barbecue ribs/chicken.

ingredients

  • 4 or more chicken breast (boneless)
  • 6-8 red peppers
  • 2-3 T. lemon powder
  • 2-3 spring onions
  • salt
  • 1/2 c. fresh grated coconut
  • use the chicken’s broth to moisten

directions

    Bake chicken for 45 minutes. (Season with salt ).Do not overcook. Must be slightly undercooked by 10 minutes.

  • 2

    Dice meat into tiny cubes. Add other ingredients to chicken. Mix well. Refrigerate for 1 hour.
