Bran Muffins
A healthy treat! Try experimenting with different add-ins, such as blueberries, cranberries, dried cherries or strawberries.
ingredients
- 1 1/2 cups flour
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 1/2 cups bran flakes
- 1 1/4 cups milk
- 1 egg
- 1/4 cup vegetable oil
- 2 cups fresh or frozen blueberries (optional)

Preheat oven to 375°. Grease a muffin pan, or line with muffin cups.

In a medium bowl, mix together flour, sugar, salt and baking powder. Set aside.

In a large bowl, mix together bran flakes and milk. Let soak for a few minutes, until bran flakes soften. Add egg and vegetable oil and mix well. Fold in blueberries.

Add dry ingredients to bran flakes mixture and blend well. Fill muffin cups to almost full- divide evenly among all 12 cups. Bake at 375° for about 18 minutes, or until golden brown. Remove to cooling rack.
