Chicken stuffed with garlic and herbed goat cheese

ingredients

  • 1 whole head of garlic
  • 11 ounces of herbed goat cheese
  • 4 skinless chicken breast
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Tablesppons olive oil

    Preheat ovento 350 degrees

  • 2

    Wrap the garlic in foil and bake for 1 hour. Combine roasted garlic with herbed goat cheese

  • 3

    Cut slits in the thickest part of the chicken. Stuff the cheese mixture into the pockets of the chicken. Season with salt and pepper. Heat oil in large oven proof skillet over medium high heat. Add the chicken and cook for 3 minutes or until lightly bronwed. Turn chicken and place in oven for 20 minutes.
