Hamburger Harvest Casserole (Lima Bean Casserole)
When Jeff was quite young and the family had this for dinner one evening, he said he couldn’t stand the lima beans. Ann told him that this WAS supper so he should get started taking the lima beans out and he did...each and every one of them. This was always a family joke because it took him quite a while to do that!
ingredients
- 1 lb. ground chuck
- 1 c. onions, minced
- 1 can (2 1/2 c.) tomatoes
- 1 Tbsp. Worcestershire sauce
- 2 tsp. salt
- 2 c. peeled, thinly sliced raw potatoes
- 1/3 c. flour
- 1 (10 oz.) pkg. frozen, cut corn, thawed just enough to separate
- 1 (10 oz.) pkg. frozen baby lima beans thawed out just enough to separate
- 1 green pepper, cut into short thick slices
- 1 1/2 c. (6 oz.) grated cheddar cheese

Heat oven to 375 degrees.

Combine chuck, onions, tomatoes, Worcestershire sauce, and salt. Pat into a single layer in a 3-quart casserole.

Place in layers, potatoes, flour, corn, lima beans, and green peppers repeating each layer for a total of two layers each.

Bake, covered, 1 hour then sprinkle with cheese and bake uncovered for 45 minutes longer or until vegetables are tender.
