Mixed Greens with Pears and Walnut and Poppy Seed Dressing

ingredients

  • 3 tbs. apple cider vinegar
  • 4 tsp Dijon mustard
  • 1 tbs. honey (I use a bit more)
  • 3/4 cup corn oil (I use scant 1/2 cup)
  • 1 tsp poppy seeds
  • 2/3 cup chopped walnuts
  • 2 ripe pears (unpeeled, cut in small pieces)
  • 8 tbs. blue saga cheese or gorgonzola
  • Organic field greens or Romaine and red leaf lettuce.

    Whisk vinegar, mustard and honey to blend. Gradually whisk in oil. Mix in poppy seeds. Season dressing to taste with salt and pepper. Can be made in advance and refrigerated.

    Toss washed and dried mixed greens and walnuts with enough dressing to coat. Toss pears with 1/4 cup dressing in a small bowl and add to top of salad. Sprinkle with cheese or serve on side.

    Note: Purchase pears several days ahead so they are fully ripened.
