Bean Soup

ingredients

  • 1 lb. Navy beans
  • 1 stick of smoked sausagey beans (rinsed and drained)
  • 10 springs of parsley
  • 2 sprigs of tyhme/rosemary
  • 1 bay leaf
  • 1 1/2 ham hocks
  • 2 celery stalks and leaves
  • 1 medium onion
  • 1 clove of garlic (chopped)
  • 6 c. cold water
  • 2 c. chicken broth
  • 2 medium carrots (coarsely chopped)
  • Kosher Salt
  • 1 stick of smoked sausage and ham
  • 3-4 potatoes

directions

Soak beans overnight in water that covers them. Drain, add all other ingredients and cook for about 1 1/2 hours. Remove beans and puree.
