Bean Soup
ingredients
- 1 lb. Navy beans
- 1 stick of smoked sausagey beans (rinsed and drained)
- 10 springs of parsley
- 2 sprigs of tyhme/rosemary
- 1 bay leaf
- 1 1/2 ham hocks
- 2 celery stalks and leaves
- 1 medium onion
- 1 clove of garlic (chopped)
- 6 c. cold water
- 2 c. chicken broth
- 2 medium carrots (coarsely chopped)
- Kosher Salt
- 1 stick of smoked sausage and ham
- 3-4 potatoes
directions
Soak beans overnight in water that covers them. Drain, add all other ingredients and cook for about 1 1/2 hours. Remove beans and puree.
