Granny Fleming's Old Fashioned Biscuit Pudding
This recipe was made by my Great Grandmother, Elizabeth “Lizzie” Lee Fleming. It is a great way to use leftover biscuits. It works with skim milk if fat content is a concern, but it is better, and creamier, with half and half or part cream.
ingredients
- 6-8 left over biscuits
- 1 1/2 C milk (plus more for moistening biscuits)
- 1/3 C flour
- 3/4 C sugar
- 3 eggs, lightly beaten
- 1 teaspoon vanilla
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 tablespoon butter, chopped

Preheat oven to 350°.

Spray 9 x 9 baking dish with cooking spray.

Pour enough milk over biscuits to cover and allow to soak for several minutes.

Combine eggs, additional milk, vanilla, and sugar.

Add flour to biscuits.

Add egg mixture to biscuits and flour and stir just until incorporated.

Pour into baking dish and sprinkle top with chopped butter and nutmeg and cinnamon.

Bake for 1 hour or until set.
