Roasted Vegetable & Goat Cheese Pizza
The smoky flavors of the roasted veggies and the tangy goat cheese are a great combination on this pizza.
ingredients
- 1 small eggplant, cut into thick chunks
- 2 zucchini, sliced lengthwise
- 1 red bell pepper, quartered and seeded
- 1 yellow pepper, quartered and seeded
- 1 small red onion, cut into wedges
- olive oil
- 10-12 inch pizza base
- 14oz can diced tomatoes, well drained
- 4 oz goat cheese, crumbled
- 1 tbsp chopped fresh thyme
- Ground black pepper

1. Preheat oven to 425° F. Place the vegetables in a roasting pan. Brush with olive oil. Roast for 30 minutes, until charred, turning the vegetables once. Remove the vegetables but leave the oven on.

2. Put the peppers in a paper bag. when cool enough to handle, peel off the skins and cut into thick strips. Brush the pizza base with olive oil and spread over the drained tomatoes. Arrange the roasted vegetables on top of the pizza. Dot with the goat’s cheese and scatter over the thyme.

3. Drizzle a little olive oil and season. Bake for 15-20 minutes, until crisp.

The roasted vegetables and goat cheese also make a great side dish. Roast the vegetables and remove the bell pepper skin as directed, then place all ingredients, minus cheese back in the baking dish. Bake for 10 minutes, add goat cheese, and bake 5 more.
