Nordstroms tomato soup

ingredients
- 1/3 c olive oil
- 5 carrots peeled and chopped
- 1 large yellow onion,chopped
- 1 tble fresh basil
- 2 28 cans whole tomato Italian in puree
- 3 32 oz chicken broth
- 2 c heavy cream
- salt to taste
- pepper to taste
directions
in 8 quart saucepan wawrm oil and coat pan. add carrots,onion and basil cook until softened. Add tomatoes including puree and broth, bring to boil. Reduce and simmer for 20 minutes. remove from heat puree soup in blender, return to saucepan.Add cream season with salt and pepper and basil on top.
notes
Can be frozen or reduced for single dinner
