This is great for Thanksgiving - Easy to make, pretty, and really yummy. It tastes great the next day, too.

ingredients

  • 1 Cup Dried Cranberries
  • 1/2 Cup Orange Juice
  • 1/2 Cup finely diced Red Onion
  • 1/2 Cup chopped fresh Cilantro
  • 1 tsp. minced fresh Garlic
  • 1 JalapeƱo - seeded and minced
  • 1/4 Cup fresh Lime Juice
  • 1/2 tsp. ground Cumin
  • 1/2 tsp. salt
  • optional - 1/2 Cup finely diced ripe fresh Mango

    1) Combine all ingredients

    2) Let Chill for at least 2 hours

notes

The cranberries will expand and soften over time in the juices!
