ingredients

  • • 1 tbsp butter
  • • 2 tbsp olive oil
  • • 1 onion, carré
  • • 1 garlic, brunoise
  • • 1 potato, carré
  • • 1 carrot, brunoise
  • • 1 cauliflower, broken into small pieces with tough stems removed
  • • 6 c. chicken stock
  • • fresh thyme
  • • salt and pepper, to taste

    Heat butter and oil in deep stock pot.

  • 2

    Add onion. When heated through, add garlic.

  • 3

    Add remaining vegetables and broth. Heat until boiling. Reduce heat and simmer, uncovered, until cauliflower is tender. Add fresh thyme and cook for 5 minutes more.

    Roughly mash with a potato masher.

  • 5

    Season with salt and pepper.
