Cauliflower Soup
ingredients
- • 1 tbsp butter
- • 2 tbsp olive oil
- • 1 onion, carré
- • 1 garlic, brunoise
- • 1 potato, carré
- • 1 carrot, brunoise
- • 1 cauliflower, broken into small pieces with tough stems removed
- • 6 c. chicken stock
- • fresh thyme
- • salt and pepper, to taste

Heat butter and oil in deep stock pot.

Add onion. When heated through, add garlic.

Add remaining vegetables and broth. Heat until boiling. Reduce heat and simmer, uncovered, until cauliflower is tender. Add fresh thyme and cook for 5 minutes more.

Roughly mash with a potato masher.

Season with salt and pepper.
