Aunt Sally's Potatoes
Creamy mashed potato casserole
ingredients
- 3 lbs red potatoes (peeled)
- 6 whole garlic cloves (peeled)
- 8 oz. cream cheese (softened)
- 8 oz. sour cream
- 2 tbs. snipped fresh chives
- Salt & Pepper to taste
- 2 tbs. melted butter

Preheat oven to 350°

Boil peeled, diced potatoes and peeled garlic in salted water until potatoes are tender (about 25 minutes)

Drain cooked potatoes and garlic and mash them or run them through a ricer.

Stir in cream cheese, sour cream and chives. Season with salt and pepper to taste.

Transfer potato mixture to a 2 quart casserole. Pour melted butter on potatoes, sprinkle with paprika.

Bake 25-30 minutes until hot and bubbly.
