Indian Salmon with Baby Spinach
I learned to make this dish while taking cooking classes from Larry Smith at the Corner Cook in Winnetka, Illinois.
ingredients
SALMON FILLETS- 2 salmon fillets
- 1 T sweet paprika
- 1 T curry powder
- 1 T sambol oleak (chili garlic sauce)
- 1 T grated ginger
- 1 tsp cumin
- 1 tsp ground coriander
- 2 T olive oil
- salt and pepper
- 1 bag of baby spinach
- Sliced fresh mango
- juice from 1/2 lemon
- Olive oil
- salt and pepper

FOR THE SALMON

Combine all of the ingredients, except the salmon. When thoroughly combined, rub on the salmon and either grill or pan roast (on a cast iron skillet) until no longer pink on the inside. (You can also partially cook on stove and then finish off in the oven.)

Place on top of baby spinach salad.
FOR THE SPINACH SALAD
Combine the lemon juice, olive oil, salt and pepper. Place spinach on plate. Top with mango and drizzle with dressing.
