Black Bean Soup
This is the quickest, low calorie soup I’ve ever made. It’s so tasty.
ingredients
- 2 (15 oz) can black beans, undrained
- 1/2 Cup bottled salsa (or less)
- 1 Tbsp. chili powder (or less)
- 1 (16 oz) can fat-free, less-sodium chicken broth
- 1/2 Cup (2 oz) shredded reduced-fat sharp cheddar cheese
- 5 Tbs. low-fat sour cream
- 5 Tbsp. minced green onions
- 2 1/2 Tbsp. chopped fresh cilantro

Place the beans and liquid in a medium saucepan; partially mash beans with a potato masher. Place over high heat; stir in salsa, chili powder, and broth. Bring to a boil. Ladle soup into bowls; top with cheese, sour cream, onions, and cilantro.

notes
1 cup = 4 pts. This could easily serve just 2 people!
