Maty's Cheeseburger Soup

Maty loves soup!

ingredients

  • 1/2 pound ground beef
  • 3/4 C chopped onion
  • 3/4 C shredded carrots
  • 3/4 C celery
  • 1 tsp basil, parsley
  • 4 Tbsp butter divided 1 & 3
  • 3 C chicken broth
  • 4 C diced potatoes
  • 1/4 C flour
  • 2 C Shredded Cheddar Cheese
  • 1 1/2C milk
  • 3/4 tsp salt/pepper
  • 1/4 C sour cream

    Brown beef, drain and set aside, Saute onion, carrot, celery, basil and parsley in 1 Tbsp butter until tender (about 10 minutes). Add broth, potatoes and beef; bring to boil. Reduce heat; cover and simmer 10-12 minutes or until potatoes are tender. In small skillet, melt remaining butter , add flour, cook and stir until smooth and creamy. Mix in the milk, cook stirring constantly for 3 - 5 minutes or until bubbly. Add to soup and bring to boil. Cook and stir for 2 minutes, reduce heat to low and add cheese, salt and pepper. Cook until cheese melts
