German Beef Salad (Feiner Rindfleischsalat)Mindy Howell
This wonderful German salad can be made as a salad or a main dish.
- 1 Tbl mustard
- 4 Tbls beef stock
- 2 Tbl vinegar
- 2 Tbl oil
- Salt and pepper
- 1 lb well-cooked beef (I use left over roast)
- 1 hard-cooked egg
- 1 cooked potato
- 1 small onion
- 5 small pickled cucumbers (sweet or dill works depending on your taste)
Mix marinade ingredients well, (they say marinade, we say dressing). Dice all other ingredients finely, or cut in slices or strips. Mix into marinade, decorate with parsely. Chill and serve.
I’ve played with this one. Often I just use left over beef steak or roast and increase the potatoes.
