My grandmother use to make me fried rice all the time, and now I make this for my son.

ingredients

  • 6 cups cooked, left over rice
  • 2 eggs beaten
  • 1 1/2 cups cooked left over meat, such as, chicken, roast pork,chinese barbecued pork,shrimp,ground beef,bacon, or even spam
  • 1/2 cup frozen peas
  • 1/8 cup sliced green onion
  • 1 1/2 teaspoons garlic salt
  • 3 tablespoons soy sauce
  • 1 teaspoon oyster flavored sauce
  • cooking oil

directions

In a large preferably non stick pan scramble eggs, put aside. In another pan heat a teaspoon of oil and saute meat, sprinkle some garlic salt and splash in a little soy sauce, remove meat and reserve in a bowl. Do not wash pan, add more oil, about 2 tablespoons heat pan on high heat, add rice, and stir fry; add more oil if rice is sticking too much, add soy sauce, oyster sauce and garlic salt to taste. Return egg and meat to the pan with the rice, add frozen peas and stir fry another minute or two. Garnish with sliced green onions (optional)

notes

Left over rice that has been refrigerated works best. Freshly cooked rice is starchy and will result in a sticky fried rice. Also never stit beaten uncooked eggs into rice. Always scramble seperate, then add to the rice.
