Cheese Batter Bread
ingredients
- 3 ounces (about 1 cup) Parmesan cheese, shredded (divided)
- 3 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon cayenne
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 4 ounces (1 cup) extra-sharp cheddar cheese, cut into 1/2-inch cubes
- 1 1/4 cups whole milk
- 3 tablespoons unsalted butter, melted
- 1 large egg, beaten
- 3/4 cup sour cream

Preheat oven to 350 degrees and spray a loaf pan with non-stick cooking spray. Sprinkle 1/2 cup of the Parmesan cheese in the bottom of the pan.

In a large bowl, whisk flour, baking powder, cayenne, salt and pepper to combine. Using spatula, mix in cheddar cubes until coated with flour. In a medium bowl, whisk together milk, butter, egg and sour cream. Using spatula, fold wet ingredients into dry ingredients until just combined. Do not overmix. Scrape batter into prepared loaf pan. Sprinkle remaining 1/2 cup Parmesan cheese over top.

Bake until deep golden brown and toothpick comes clean, about 45-50 minutes. Cool pan on wire rack for 5 minutes. Invert loaf from pan and continue to cool.
