Split Pea Soup
ingredients
- 2 cups dried split peas
- 2 quarts water
- 1 ham bone
- 1 cup celery - chopped
- 1/2 onion - chopped
- 1/2 cup carrots - diced
- 1 clove garlic
- 1 bay leaf
- 1/4 teaspoon thyme
- 1 teaspoon parsley flakes
- salt and pepper
directions
Wash and sort peas. Add peas to water in large pot. Simmer 2 minutes. Remove from heat, cover and let stand 1 hour. Add ham bone, veggies, bay leaf and thyme. Bring to a boil. Reduce heat and simmer 3 hours or until peas are soft. Remove ham bone and return meat from bone to soup. Season to taste with salt and pepper. Garbish with parsley flakes.
