Chicken & Dumplings
I actually found this recipe on the internet. Its pretty good. NOT LIKE MY GRANDMOMMA’S THOUGH!
ingredients
- 3 1/2 lb. Chicken, cut into 8 or more pieces
- 1 T. salt
- 1 T. garlic salt
- 2 tsp. baking powder
- 4 c. water
- 3 green bell peppers
- 3 T. sugar
- 1/2 c. Crisco solid vegetable shortening
- 3 stalks celery, chopped
- 2 1/2 c. all-purspose flour
- 3 lg. eggs, beaten
- 3 onions, chopped
- 2 tsp. fresh ground black pepper
- 1 1/2 c. whole milk
directions
Wash and drain chicken. Place chicken, water, inions, celery, green peppers, salt, garlic salt, and pepper in a large pot or dutch oven. Heat over medium heat until boiling. Reduce the heat to simmering and cook 10 more minutes. Meanwhile make dumplings. Stir the flour, sugar, and baking powder in a large bowl until combined. Make a well in the center of the mixture and add the milk, eggs, and shortening. Mix the wet ingredients into the dry ingredients with your fingers until they form a smooth, soft dough. Turn the dough onto a lightly floured board. Check chicken, there should be enough liquid to barely cover chicken and vegetables, if not add water. Lightly flour your hands and roll dumpling dough into 1-inch balls. Drop the dumplings into the pot of chicken until they cover the surface in a single layer. Cover pot and bowl 15 minutes. Reduce heat and simmer until dumplings are light and cooked through, about 5-10 minutes.
