Ginger Peach Bellini

ingredients

  • Ginger Syrup:
  • 1/4 cup sliced fresh ginger with skin
  • 2 cups white sugar
  • 2 cups cold water
  • Peach Puree:
  • 10 oz frozen peaches- thawed
  • 1/2 cup ginger syrup
  • For serving:
  • Ice cubes
  • 1 bottle champagne

    Make ginger simple syrup. Place sliced ginger, sugar and water in saucepan over med heat. Bring to boil, stirring until sugar dissolves. Remove from heat and cover for 15 mins. Remove ginger.

    Blend peaches and 1/2 cup ginger syrup until smooth.

    To serve:

    Add ice cubes to a cocktail shaker and fill halr way with peach puree mix. top off with Champagne, shake to combine. Pour into champagne glasses.
