Chicken Sarabella
ingredients
- 2 lb chicken breasts
- 1 head or garlic, finely cut
- 1 tbsp oregano
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 8 pitted prunes
- 8 pitted Spanish olives
- 2 bay leaves
- 3 tbsp brown sugar
- 6 tbsp white wine
- 1/4 cup fresh cilantro, finely chopped
- Coarse salt, to sates
- Black pepper, freshly ground, to taste

Combine chicken, garlic, oregano, vinegar, olive oil, prunes, olives and bay leaves. Add salt and pepper, to taste. Cover and let marinate refrigerated overnight.

Preheat oven to 350. Arrange chicken in a single later in a large shallow baking pan and spoon marinated over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine all around them.

Bake for 50 minutes to one hour, basting frequently until chicken is done. Serve over couscous or salad with pan juices.
notes
Key is fresh cilantro. Brown sugar optional, usually use less than 1 Tbsp.
