White Chili
ingredients
- 1 lb great northern beans
- 2 lbs boneless chicken breast
- 1 Tbs olive oil
- 2 med onions, chopped
- 4 cloves minced garlic
- 2 - 4oz cans green chilies
- 2 tsp cumin
- 1 1//2 tsp oregano
- 1/4 tsp cloves
- 1/4 tsp cayenne pepper
- 5 cups chicken broth
- 1 can beer
- Opt: white, lemon, black pepper
- 3 cups grated Monterey Jack cheese
- sour cream and salsa
directions
Soak beans overnight. Cook chicken. Saute onions in oil until they are translucent: stir in garlic, chilies,cumin, oregano, cloves, and cayenne, saute 2 minutes. Add beans, stock and beer. If desired, stir in opt. peppers. Bring to a boil. Reduce heat and simmer until beans are very tender, about 2 hours. Stir occasionally. Add chicken and 1 cup cheese, stir until cheese melts. Serve with sour cream and salsa.
