Osso Bucco
ingredients
- 2 Tbs flour
- 1 1/2 tsp salt
- 1 1//2 tsp pepper
- 4 (10 oz) veal shanks (1 1/2 inches thick)
- 1 Tbs olive oil
- 4 carrots, diced
- 4 celery ribs, diced
- 1 lg onion, diced
- 2 garlic cloves, minced
- 1 cup dry white wine
- 1 (14 1/2 oz) can plum tomatoes, undrained and chopped
- 1 (10 1/2 oz) can beef broth
- 2 tsp chopped fresh rosemary
- 1/2 cup water
- 1/2 cup flour

Combine 2 Tbs flour, 1/4 tsp salt, and 1/2 tsp pepper in a shallow dish. Dredge veal shanks in flour mixture.

Cook veal in hot oil in Dutch oven over medium-high heat 2 1/2 minutes on eaach side or until browned. Remove from pan. Reduce heat to medium. Add carrots and next 3 ingredients, remaining 1 tsp salt, ad remaining 1 tsp pepper.

Bake, covered at 350 F for 2 hours until veal is tender. Remove veal from pan, reserving vegetable mixture.

Whisk together 1/2 c water and 1/4 c flour; stir into vegetable mixture. Bring to a boil, and boil, stirring constantly, 5 minutes or until thickened. Return veal to mixture, and serve warm with mashed potatoes.
