Latkes
The classic Chanukah treat!
ingredients
- 1 egg
- 1 small onion, cut into chunks
- 2 tablespoons flour or matzo meal
- 1/2 teaspoon salt
- generous dash pepper
- 3 peeled, cubed, medium-sized potatoes

1. Whirl all the ingredients together in a blender.

2. In a large skillet, heat 1/2 inch of oil until hot. Drop the into the oil scant 1/2 cupfuls potato mixture several inches apart. Gently flatten each mound into a 4 inch circle. Fry until golden brown, turning once. Drain on paper towels. Keep warm in 200 degree oven while frying the rest!
