Spinach Soufflè
ingredients
- 4 Tbsp butter
- 4 Tbsp flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup milk
- 1/2 cup grated cheese
- 1 egg
- 1 pkg frozen spinach
- 1 tsp sugar
- 1/8 tsp cayenne pepper

Melt butter, remove from heat. Add flour, salt and pepper. Mix until smooth. Defrost spinach in microwave for 3 minutes on high, then drain well.

Gradually add milk to flour mixture until well blended.

Cook over low hear, stirring constantly until thick and smooth.

Stir in cheese, egg and sugar: mix until cheese is melted .

Add cayenne pepper.

Add spinach, mixing well. Pour into greased 1-quart casserole dish. Sprinkle with crumbled bacon (optional)

Bake at 350 F for 45 minutes
