South Cheese Biscuits
ingredients
- 1/2 lb extra sharp chedder cheese (good quality)
- 1/2 lb butter (do not substitute)
- 2 1/2 cups flour
- 1 tsp cayenne pepper
- 1 tsp salt

Sift the flour. Cream butter and cheese; add sifted flour, salt and pepper. Place in refrigerator for about 30 minutes. Take about 2 cups of dough out of refrigerator at a time and roll out thinly. Cut shapes with small cookie cutter. Bake on greased cookie sheet at 425 degrees for 8 - 10 minutes. Cool completely before storing in an air tight container.

Variations: Can make cheese straws with cookie press. Or, top with half pecan before baking. Try different cheeses.
