SAUSAGE EGG CASSEROLE
ingredients
- 1 lb linked, garlic sausage
- 6 oz sharp cheddar cheese
- 2 slices bread
- 6 eggs
- salt and pepper to taste
- 1 t dry mustard
- 2 C milk

Remove the meat from the casing. Heat oil in a skillet. Brown the sausage meat. Remove from skillet with slotted spoon. Place in lightly greased 9x13 baking dish.

Grate cheese and sprinkle over the meat.

Cut bread into small, coarse pieces and sprinkle over the cheese.

Combine the eggs, salt, pepper, mustard, and milk. Beat with fork and then pour over the meat, cheese, and bread.

Cover and chill – it’s best when prepared ahead and refrigerated.

At serving time, heat oven to 350F/180C and bake sausage casserole for 45 to 60 minutes or until set. To determine if it is set, place a knife in the centre, remove it, and check to see if it comes out clean. Clean means set.
