Nanny's Chicken Stuffing
ingredients
- 1 skillet of cornbread
- 1/2 of a whole boiled fryer hen
- 4 strips of bacon
- 3 small yellow onions diced
- 1/2 bundle of celery diced
- 1 bell pepper diced
- 2 hard boiled eggs cut up for mixing
- poultry seasoning
- couple cloves of garlic
- sage
- salt/pepper
- chicken broth to moisten while baking
- Cornbread:
- 1 cup buttermilk
- 1 cup stone ground cornmeal
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 1 tablespoon shortening

Boil you up a fryer hen. I boil mine with salt, pepper, 2 lemons, bay leaf, jalapeno, and some Everglades Seasoning mix. (http://www.evergladesseasoning.com/)

While your chicken’s cooking, do up a skillet of cornbread. And have it cooling. Then pull apart your chicken, get all the skin and grissle out of it, chop it up together. Brown off your bacon, then saute your vegetables until soft and translucent. Crumble up the cornbread in a large bowl, add the vegetable mix, the boiled eggs, the bacon, and the chicken until folded in well. Add chicken broth until it makes a muddy consistency, and put it ina casserole pan for baking.

Bake at 350 for 35-45 minutes or until top is browned the way you like it.
