Apple Cake
A light apple cake
ingredients
- 2 cups apples, cubed with peel on
- 2 1/2 cups flour
- 1 tbspn baking powder
- 2 tspns cinnamon
- 1/2 cup dark brown sugar, lump free
- 1/2 tspn salt
- 2 eggs
- 1 cup buttermilk
- 1/4 cup butter, melted and cooled
- 1/2 cup finely chopped pecans or walnuts
- 3 tbspns large grain sugar

Preheat oven to 400 degrees with racks in center. Butter and flour (or line with parchment paper) one 9 inch square baking dish or tart pan or bake in a 9x13 pan for a thinner cake and check after 20 minutes in oven.

Place chopped apples in a bowl of water along with the juice of one lemon. Set aside. Combine the flour, baking powder, cinnamon, sugar and salt in a large bowl. In a separate smaller bowl whisk together the eggs and buttermilk. Whisk in the melted butter. Pour the buttermilk mixture over the flour mixture and stir until largely combined-try not to over mix. Now drain the apple, shake off any excess water and fold the apples and pecans into the cake batter.

Spoon the batter into the prepared pan, pushing it toward the edges. Sprinkle with the large grained sugar. Bake for 20-25 minutes or until cake is just set and a bit golden on top.
