Sauteed Spinach
This is one of my favorite ways to serve spinach, plus it is very fast.
ingredients
- 1 T. olive oil
- 1 garlic clove, thinly sliced
- 8 c. washed and dried fresh spinach
- 1 1/2 T. Balsamic vinegar
- salt and freshly ground black pepper
directions
Heat oil in large nonstick skillet over med-high heat. Add garlic and cook 1 minute, or until fragrant. Add spinach and cook 2 minutes until spinach begins to cook down. Add vinegar and cook turning spinach until wilted. Season with salt and pepper and serve.
