Potato Salad

ingredients

  • 4 c. red potatoes, boiled, cooled, and cubed
  • 1 Tbsp. onions, finely minced
  • 1/2 tsp. salt
  • Dash of pepper
  • 1/4 c. dressing made of 1/4 c. olive oil, 1 Tbsp. vinegar, 1 Tbsp. lemon juice, dash of salt, dry mustard, and paprika.
  • 2 hard cooked eggs
  • 1 c. celery, diced
  • 1/2 c. mayo

directions

Mix the potatoes, onions, salt, pepper, and dressing together and refrigerate for at least an hour. Remove egg yolks from hard cooked eggs and dice egg whites. Add egg whites and celery to the potatoes. Mash egg yolks and add to mayo, add more mayo if too thick and pour over the potatoes.
