Greek Potato Salad with Feta Vinaigrette

ingredients

  • 2 pounds red potatoes
  • 2 Tbs red wine vinegar
  • 1/4 cup olive oil
  • 1 Tbs Dijon mustard
  • 2 Tbs chopped fresh oregano
  • 1/4 cup chopped fresh parsley
  • 1/2 cup kalamata olives, halved
  • 1 cucumber, peeled, seeded and diced
  • 1/2 cup green pepper, chopped
  • 1/2 cup red pepper, chopped
  • 1/2 cup minced red onion
  • 1 cup crumbled feta cheese

directions

    Steam potatoes until tender, about 13 minutes. Whisk together vinegar, olive oil, mustard and oregano. While potatoes are warm, toss with dressing and let cool. Stir in olives, cucumber, red and green pepper, onion, cheese and parsley. Chill.
