Debbie's Big Soft Ginger Cookies

Makes 24 3-inch cookies

ingredients

  • 2 1/4 c all-purpose flour
  • 2 t ground ginger
  • 1 t baking soda
  • 3/4 t ground cinnamon
  • 1/2 t ground cloves
  • 1/4 t salt
  • 3/4 c butter or shortening
  • 1 c sugar
  • 1 egg
  • 1/4 c molasses
  • 2 T sugar

    Preheat oven to 350 degrees.

    Combine flour, ginger, soda, cinnamon, cloves and salt and set aside.

    In large mixing bowl beat butter with mixer on low speed for 30 seconds to soften.

    Gradually add the 1 cup sugar; beat till fluffy.

    Add egg and molasses; beat well.

  • 6

    Stir dry ingredients into beaten mixture.

    Shape into 1 1/2-inch balls.

    Roll in the 2 T sugar and place on ungreased cookie sheet about 2 1/2-inches

    apart.

    Bake in 350 degree oven for 10 minutes.

    Stand for 2 minutes before transferring to a wire rack.
