Sausage, Zucchini, and Bell Pepper Frittata
ingredients
- 1/4 pound spiced venison sausage
- 6 medium mushrooms, sliced
- 1/2 green bell pepper, chopped
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 teaspoon dried basil, crushed
- 1/4 teaspoon red pepper flakes (optional)
- 7 eggs, beaten
- 1 cup (4 ounces) grated mozzarella cheese

In a large skillet, cook sausage, stirring to crumble, until browned.

Add mushrooms, bell pepper, zucchini, oil, salt, basil, and red pepper flakes (optional). Sauté for 3 to 4 minutes.

Combine sausage mixture, eggs, and cheese, mixing well. Pour into greased 10-inch pie plate.

Baked at 350 degrees for 25 to 30 minutes or until eggs are firm. Serve warm.
