Daphne's Chicken Marbella
great blend of flavors serves 8 - 10
ingredients
- 1 12 oz pitted prunes
- 1 small jar capers, drained
- 1 0.5 oz bottle dried oregano
- 6 bay leaves
- 1Tbsp minced garlic
- 1 C pimento stuffed olives
- 1/2 C red wine vinegar
- 1/2 C olive oil
- 1 Tbs sea salt
- 2 tsp pepper
- 8 lbs mixed chicken pieces
- 1 C firmly packed brown sugar
- 1 C dry white wine
- 1/4 C chopped fresh parsley

Combine first 10 ingredients in large zip-top freezer bag. Add chicken pieces and coat well. Seal and chill at least 8 hrs, esp overnight, turning when you think of it.

Arrange chicken in a single layer in 1 or 2 large baking pans. Pous marinade over them and sprinkle evenly with the sugar, pour wine around pieces.

Bake 350 for 50-60 min, basting often.

Remove chicken, prunes, etc to serving platter and drizzle with pan juices. Sprinkle parsley and discard bay leaves. Serve with remaining juices.
